Blue Cornmeal has a sweet, intense flavor and a hearty, fine texture. Blue Cornmeal is made from ground Blue Posole. Blue Corn, also called Hopi Corn, is still cultivated by Native Americans of the southwest. For them, Blue Corn has significant spiritual importance. It represents the eastern rising sun and the beginning of life, wisdom and understanding. Taos Pueblo elders use Blue Corn in the naming ceremonies of infants. Ground Posole is used for many products such as Cornmeal, Corn Starch, Masa Harina and Corn Flour. Cornmeal is made of dried corn kernels that have been ground into a fine, medium or course texture. Cornmeal commonly comes in a yellow or white form. The specialty Cornmeal typically comes in a blue or red form. Cornmeal is used primarily to make corn chips, corn bread, tortillas and porridge.

Our USDA Organic, Kosher mesquite flour is made from the beans of trees from Argentina and Peru, and is a versatile ingredient that will add flavor and aroma to surprisingly different types of gluten free and non-gluten free products. The mild cinnamon/coconut/chocolate type aroma and flavor can be achieved by using about 2 rounded tablespoons per cup of dry ingredients. This requires a slight increase in liquid to the mixture (often milk). Mesquite is an excellent source of dietary fiber.

This is about the best bacon I have ever tasted. It is also very uniform. You have just the right amount of fat on the pieces and they don’t vary much. The taste is spectacular.

We first had this from our neighbourhood specialty grocery. My wife mocks me but even with shipping the five pound package via Amazon is cheaper. And the bacon is some of the best you will ever have. Well worth it, in our opinion.
